Bok Choy, Anyone?

Folate is an essential nutrient which helps promote fertility in both men and women and is a very important nutrient in pregnancy to promote healthy cells and prevent birth defects. Vitamin C is also an antioxidant, and studies show that vitamin C enhances sperm quality, protecting sperm and the DNA within it from damage. One study has shown that women taking the drug clomiphene to stimulate ovulation will have a better chance of ovulating if vitamin C is taken alongside the drug. Clomiphene does not always work in every woman, but the chances are often increased when vitamin C is supplemented.

Bok Choy has long been a staple in Asian cuisine, and has been making it's way into mainstream America. Bok Choy is a member of the brassica family, a genus of plants known as mustards or cabbage. It is rich in folate, Vitamin C, beta-carotene (1 cup contains nearly the entire RDA), calcium (1 cup contains approximately the same as 1/2 cup milk) and potassium. It also contains nitrogen known as indoles, which are phytochemicals that are said to prevent breast cancer.
